Strawberry Love Letter Parcels

Ingredients

500g Short Love Pastry

50g Love Strawberry Jam

20g Caster Sugar

1 Egg, Mixed

500ml Double Cream

20g Icing Sugar

Method

In a bowl combine your 50g of love strawberry jam and 20g of caster sugar and lovingly stir until all of the sugar has become one with the jam.

Next in a separate bowl mix all of your 500g of gorgeous double cream until the cream turns into indulgent whipped cream with stiff peaks, then combine the jam mixture with the whipped cream to create your phenomenal mixture, allow this to cool in the fridge.

Next roll out your short love pastry to the thickness of a £1 coin, then cut the pastry into 12 rectangles, then place 1tsp of the indulgent strawberry cream onto 6 of the pastry rectangles in the centre and place the remaining 6 rectangle pastries on top, this will create the letter shape, brush each filled pastry letter with beaten egg to create a glaze on top. Place the filled parcels onto a baking sheet and cook in the oven at 180 degrees Celsius or until golden brown. Once cooked, remove from the oven allow the parcels to cool and then sieve the 20g of icing sugar all over the parcels and serve on a heart shaped plate.
